Simple and sweet, our Vanilla Bean cookie thins make perfect dippers for coffee or tea — or a great snack on their own!

It was a long, cold winter and I was missing the beach.  Since it would be a while before I felt the sand between my toes, I wanted to create a cookie that would bring the beach to me.  As I looked around my kitchen for inspiration, I noticed one piece of key lime pie left over from the holidays. As I savored each bite of the key lime pie, I mixed NON-GMO ingredients; flour, cane sugar, eggs, butter and my new Key Lime Cookie Thins created a delightful new cookie.  My family was so excited about the new cookies they didn’t even notice the pie was gone!

The night before my son’s 6th grade bake sale, I decided to bake a tray of my famous fudgy brownies. I began my usual preparations by laying out premium NON-GMO ingredients; flour, cane sugar, eggs, butter, cocoa and the most delicious dark chocolate morsels. At the last minute (of course!), my son tells me that our neighbor is already baking brownies. What to do? I changed the recipe and used teaspoons to make thin, crispy, deliciously crunchy cookies™!! Wouldn’t you know, these cookies were the hit at the bake sale! Now, I can share my newest Brownie Batter Cookie Thins with all my amazing Mrs. Thinster ™ fans.
